Panini Sandwiches

I tried my first panini sandwich last night and loved it. I was thinking it would be really easy to make at home and something that the kids would eat. Does anyone have any suggestions for what is good to put in them? The recipes on line are endless. Just wondering if anyone has a recipe that they love? On that note, I'm open to any dinner suggestions these days. I'm always looking to mix things up a bit. Thanks!

oh my gosh I love Panini's! ( I just tried the turkey artichoke one yummy!!!) We should go to that little bakery for lunch/ dinner one night!!!

I have a panini press that I use to make sandwhiches all the time, let me know if you want to borrow it!

Try spinach and mozzerella. Aaron likes tomatoes too, but I'm not a tomato girl.

I think you can panini anything that you can make a sandwich out of. I've only had one at La Bou and it was ham and cheese. They put spicy mustard on it which ruined it for me.

There's a veggie one at Panera that I LOVE. I'm not sure what is all in it but I'm sure you could find it online. It's something like the Medeterranian...or something. It's got red onions, cilantro hummus, etc. Sorry I couldn't be more specific!!

my fav right now is sourdough, mustard ham (very spare amount just for flavor) swiss sliced pear and spinach. red onion is also a great ad on, but I rarely have one on hand. and I make mine on the griddle with something heavy on top. mmmm. shaer what your favorite is!

We call them squashed sandwiches at our house. We have been experimenting lately. Peanut Butter and Jelly is actually quite good, as are ham and cheese, or lately I've been making ham, avacodo and tomato. We do it on a flat pan (or griddle) with our heavy stock pot on top.
